Leeks from Sahagún filled with marinated anchovies, eggs of trout and reineta apple sauce.  

Ingredients for 4 people:
1 jar of leeks from Sahagún,
400 g, of fresh anchovies.
1 onion.
2 spoonfuls of ketchup, parsley, vinegar, olive oil, 300 grs of reineta apple, 200 grs of trout eggs.

Marinate the anchovies in vinegar and salt during 2 hours. Slice in small dices the onion, the parsley and the anchovies. Add some tomato, cut the leeks in slices drawing out the core and filling then with anchovies. Then we roast the apple and smash it with 100 grs of water. 

Presentation: We place the leeks in the center of the dish with the trout eggs on one side and the sauce on the other side.
